Jacques Pepin recently released an older video making a soup from the pea pods that his mother used to make. Basically you cook the pods in some lightly salted water, run it through a food mill and finish with a bit of heavy cream. I haven’t made it yet, but it is definitely on my list to try.
This wonderful piece reminds me so much of visiting my mother in law's farm in rural TN, long before hybrid corn was a thing. She asked me, "Bette, how many ears of corn would you like for dinner?" I'm a city girl and the idea of having more than one never occurred to me, so, I said "um, one?" She laughed and said she was having six, and her husband eight. I said ok, two, and she then sent me out to pick the ears, while she put the water on to boil. No more than 10 minutes from stalk to pot was allowed!
Beautiful written with a rhythm that makes me want to run up and down the hills to pick the peas and get them into their waterbath as quickly as possible. Thank you for capturing this springtime fervor.
